Dude......can you tell me what you can do in Adobe Illustrator, that you can't do in Photoshop? I have Illustrator, but don't really know what i can do with it..

That is part of its fun. :) It looks like there is not much to it. Tools are confusing as all hell. But once you get it... you get it. The reason I am using it for logos and titles is that you can fine tune vectors a bit more than in PS. I would have to say that the main diff is raster and vector image formats. PS allows you some control with shapes and text but not full. Ai is also easier to edit that shape and text layers in PS.
